Gluten is a protein found in wheat and related grains, including barley and rye. Gluten gives the elasticity to the cake, helping it to rise and keep its shape and often gives the final moist, non-crumbly texture.
At Gluten Free Cake Nation we have overcome the lack of gluten to keep the cakes elastic and moist without the need for gluten.
Is there any risk cross contamination in your facility?
The kitchen is 100% gluten free. We do not allow any food products that have gluten in them into our facilities; therefore there is no fear of any risk of cross contamination.
Why choose to bake gluten free products only?
All our cakes are delicious, so people with a tolerance to gluten can easily eat and enjoy the cakes. However those in the community who cannot tolerate gluten or are coeliac often find that they miss out on the delicious cakes that are served in social situations. At Gluten Free Cake Nation we feel everyone deserves scrumptious cakes, which is why we have developed the gluten free /lactose free cake range.
What do you use instead of wheat flour in your cakes?
Every cake is different, but all contain some combination of rice flour, tapioca flour, potato starch and maize starch. People with corn allergies, can have flour modified without maize flour.
Does Gluten Free Cakes taste any different?
When I originally started gluten free baking 15 years ago, there was quite a difference between cakes with gluten and cakes without, however over time the combination of flours have improved, and the gluten free cakes taste just as delicious and moist as gluten filled cakes.
Do you cater for people who suffer from other allergies?
Yes we do.
We are easily able to modify the majority of our recipes to cater for dairy free or lactose free allergies- any cake that has a D in cake selection next to the title, can be made dairy free.
We have a vegan selection; any cake that has a V next to the title in cake selection can be made vegan, as well as gluten free.
We can modify our flour and buttercream if there is a corn allergy.
We can modify the cakes for a soy allergy.
None of our cakes contain nuts, however as we are not a dedicated nut free kitchen we can only state that there may be traces of nuts.
Please let us know your requirements and we will do what we can to fulfil your requests.
Can you freeze your products?
Yes all of our cakes can be frozen. If freezing is required we have an information sheet, with the best way to freeze the cakes. We recommend any left over cake (if there is any), to be cut into slices and frozen, then taken out and microwaved as need to keep the cake as fresh as possible.
What is the shelf life of your products?
This will vary but we recommend eating our cakes within 2 days. An instruction pamphlet on 'how to care for your cake' is provided in your cake box. We recommend any left over cake (if there is any), to be cut into slices placed into an airtight plastic container and frozen, then taken out and microwaved as needed, to keep the cake as fresh as possible.
